- 1 kuya ku-3 ama-chilies abomvu (kuye ngokuthi ushisa kangakanani i-curry yakho (de-seeded uma kuyadingeka ukushisa okuncane, noma 1/3 kuya ku-3/4 tsp.
- 3/4 tbsp.
- ukunamathela kwe-tamarind
- 1 tbsp. ushukela omnyama
- 2 tsp. i-soy sauce (emnyama)
- 4 tbsp.
- fish sauce
- 1/2 tsp. i-turmeric
- 1 i-tbsp egcwala. i-coriander (umhlabathi)
- 1 tbsp. i-cumin (umhlabathi)
- 1 1/2 tsp. isinamoni
- 1/4 tsp. i-nutmeg
- 1/4 tsp. ama-clove
- 1 tsp.
- ama-shrimp paste (atholakala yi-jar at ezitolo zokudla zase-Asia, noma engeza u-1 tbsp.
- Ngokuba iDish:
- 1 lb. izingcezu zenkukhu
- Okuzikhethela: i-anise yezinkanyezi ezimbili (egcwele, etholakala ezitolo zokudla zase-Asia)
- Ukuze kuhlolwe:
- Okuzikhethela: i-coriander (amaqabunga ama-cilantro amasha)
Indlela Yokwenza
- Beka zonke izithako ze-sauce ku-processor yokudla. Hlela kahle ukwakha unamathisela we-curry obukhulu. Uma ungenayo iprosesa yokudla , vele ukhiphe u-anyanisi uphinde uthinte amakhambi kahle bese uhlanganisa nobisi lwekhanda, izinongo, nezinye izithako. Lezi zitshalo neziqhumane nazo zingase zibe phansi kanye ne-pestle kanye nomdaka.
- Yenza ukuhlolwa kokunambitheka kasawoti kanye nesipuni, wengeze inhlanzi enkulu yezinhlanzi uma ungenalo usawoti ngokwanele. Uma kungenasipuni okwanele, engeza u- fresh chili noma isilimu sauce . Uma unomuncu kakhulu, engeza ushukela omncane obomvu.
- Faka u-sauce ekomini noma embizeni phezu kokushisa okuphakathi. Engeza izinhlamvu zezinkukhu kanye ne- anise yonke inkanyezi , uma usebenzisa, futhi uvuselele kahle. Qhubeka uvuselela ngezikhathi ezithile uma uletha emathumba. Bese unciphisa ukushisa ekumeni. Musa ukumboza, njengoba ufuna i-sauce inciphise iphinde ibe yimbi.
- Vumela i-curry ukuba imise, ivuselele ngezinye izikhathi, kuze kube yihora elilodwa, noma kuze kube yilapho inkukhu iphekwe futhi ithenda. I-sauce izonciphisa kangangokuthi ifana nokugqoka inyama (futhi kuyoba nomsuka omncane osele epanini).
- Khonza ngokuqondile ku-wok nomunye usuphu owengeziwe othuliwe. Gcoba ngokufafaza kwe-coriander entsha, uma ufisa. Khonza ngelayisi le-jasmine elimnandi kakhulu noma irayisi le-kakhukhunathi elilula lase-Thai . Lesi sidlo singasetshenziswa futhi ngesinkwa esicacile.
