I-risotto yama-mushroom iyamangalisa, ikakhulukazi ekwindla lapho ama-mushrooms e-porcini ehlanzekile, kodwa lokhu isidlo sinomnandi lapho kwenziwa ngamakhowe omisiwe. Uma ungeke ukwazi ukuthola i-porcini esisha noma eyomile, ungasebenzisa amanye amakhowe anomsindo (njenge-chanterelles / giroles noma ngaphezulu).

  1. Nciphisa amakhowe omisiwe we-porcini ku-1 indebe yamanzi ashisayo imizuzu engu-15.
  2. Ngesikhathi esifanayo, faka u-anyanisi ngamapuni wezipuni ezimbili (noma ama-3 wezipuni amafutha omnqumo) phezu kokushisa okuphakathi. Lapho u-anyanisi elula, khipha epayipi usebenzisa isipuni esitshaliwe bese ushukumisa irayisi ibe ibhotela (noma ioli) ebhodweni. Hlanganisa irayisi imizuzu eminingana, kuze kube yilapho ishintshashintsha, ivuselela njalo ngesipuni sokhuni ukugwema ukunamathela noma ukushisa.

  2. Yengeza amakhowe aqoshiwe kanye nomswakama wabo omuncu we-rice, bese uqhubeka wengeze amanzi noma umhluzi we-ladle ngesikhathi, uvuselele ngezinye izikhathi. Uma nje irayisi i- al dente , vala ukushisa, gxuma emgqonyeni we-1/4 webhotela osisele, 1/2 indebe ye-ushizi ogayiwe, ukhilimu (uma usebenzisa), kancane kancane pepper, i-parsley, nosawoti omuhle, ukunambitha. Vala bese uhlala imizuzu emibili.
  3. Khonza ushisayo, ushizi olusele olusele lokufafaza phezulu.
  4. Lokhu kuzobambisana kahle ngokubomvu okukhanyayo, isibonelo, i-Sangiovese di Romagna noma u-Valcalepio Rosso.
