Ukulungiselela

Ngokushesha nje lapho iqala ukuqhuma (hhayi emnyama) engeza ufulawa bese ugoqa nge-spoon yezinkuni kuze kube yilapho kungabikho izibani, Engeza ubisi kancane kancane, uvuselele njalo nge-whisk, kuze kube yilapho isuphu iqala ukugaya - ukhilimu ngaphandle kokukhulu kakhulu ( kuyobe isondeza ngokuqhubekayo ngemuva kokususa ekushiseni). Susa kusukela ekushiseni bese ugosa ngosawoti, pepper, kanye ne-nutmeg. Vumela i-sauce ipholile imizuzu embalwa ngaphambi kokugubha isikhuphaki seqanda kuze ihlanganiswe kahle.

Ukusuka kwesobunxele kuya kwesokudla: ufafaza kahle ngoshizi, engeza inyama yokugcwalisa, ukumboza nge-bechamel, phezulu ngenxenye yetamatisi kanye noshizi. - Khipha kancane kancane isitshalo sesitshalo seqanda emafutheni omnqumo epanini lokubili lokuthosa. Qala ngamafutha amancane (3 wezipuni) kodwa ube ngaphezulu ngoba isitshalo seqanda sithatha amafutha amaningi futhi i-pan ingawuma. Lesi sinyathelo singamane siwuthambisa kancane isitshalo seqanda, ngakho-ke siphuthuma ngokushesha ezinhlangothini zombili, susa, futhi usule emgqeni (ungasula amafutha).
- Beka i-halves ye-eggplant engezansi kwe-pan yokubhaka noma yokugaya. Fafaza ezinye ushizi ukumboza phansi komthombo esitshalo seqanda, khona-ke isipuni ekugcwaliseni phezulu kwamacici ohlangothini.
- Faka isipuni phezu kwe-béchamel sauce (isipuni esisodwa se-1 ngayinye), bese ubeka ucezu phezulu utamatisi.
- Lapho zonke amaqabunga eseqedile, ufafaza ushizi osele ushiywe ngaphezulu.
- Pheka endaweni yokugcina i-oven ephansi kunazo zonke kuze kube yilapho i-béchamel ibohwa, i-cheese phezulu i-brown, futhi ama-eggplants athambile, amahora angu-1 kuya ku-1/2.

- Ngomsoco omncane ongakapheli, lapho ulungiselela utamatisi, u-anyanisi nesitshalo se-isitshalo seqanda, sebenzisa iprosesa yokudla noma uwahlanganise ukuba enze izingcezu ezincane ze-pulpy. Sebenzisa ngeziphuzo zabo. Nciphisa isikhathi sokumisa imizuzu engu-10-15 njengoba kuzothatha isikhathi esingaphansi salesi sauce.
- Ezinye izinguqulo azibizi ucezu lwesitamatisi phezulu. Uma ungayisebenzisi, nje ufafaze ushizi osele phezulu kwe-béchamel, upheke ngendlela efanayo, amahora angu-1 kuya kwangu-1/2 noma kuze kube yi-béchamel browns kanye nama-eggplants athambile.
